I am a person who has always loved a doughnut, but they are not the healthiest treat in the world. The good news is, they can be!
The video below shows a “healthier” way to make a doughnut, which is baked not fried. But, we can do better than that! Once I watched the video I knew I had to get on this, and here is the recipe I came up with:
Blueberries-in-Pan
Ingredients:
1 Cup Organic Unbleached pastry flour
1/2 Organic Coconut Sugar
¾ tsp baking powder
¾ tsp baking soda
½ cup Organic Coconut Milk Yogurt
1 Organic Cage-free egg or ¼ cup Applesauce (I used applesauce)
1 tsp vanilla extract
1 Cup Organic Blueberries
Method:
Add all the dry ingredients into a bowl, whisk together and set aside. Then, in a separate bowl add the wet ingredients, again stirring to combine. Add the wet into the dry, and fold in the blueberries. I happen to have a cake doughnut pan, but if you don’t you can scoop them out using a melon baller, and call them doughnut holes!
Put them into an oven you have had preheating to 375F, for 10-12 minutes.
